Crustless tofu, spinach and feta quiche

3 tblsp onions1 package frozen spinach2 large eggs1/2 cup egg beaters1/2 cup flour1/2 tsp baking powder1 1/3 cup 1% Milk1 cup tofu, firm1/2 cup feta cheese
cook onions in olive oil. drain spinach, add to onions. crumble tofu and add to mixture. cook 5-10 minutes. in large bowl, whisk eggs and egg beaters, flour, baking powder. whisk in milk, then stir in spinach mixture. pour into greased tart/quiche pan or pie plate. top with feta cheese. bake for 25 minutes on 400 degrees or until center is set and outside edge is golden brown. let set for 5 minutes, then slice and server.
