2 Chicken Breasts (abt 1 lb.), cooked and chopped (skinless and boneless) 3 cups quinoa, cooked1/2 cup cucumber, skin on, diced 1/4 cup red bell pepper, diced 2 Tbsp flat leaf parsley, chopped2 tsp fresh mint, chopped2 Tbsp Extra Virgin Olive Oil1 Tbsp lemon juice, fresh2 Tbsp red onion, minced1 1/2 tsp Sherry Vinegar1/2 tsp Sea Salt1/8 tsp black pepper, freshly groundCombine all ingredients in a medium to large bowl.Vinaigrette Dressing2 Tbs lemon juice, fresh1 1/2 Tbs water1 Tbsp Olive Oil, extra virgin2 1/2 Tbsp flat leaf parsley, choppedSea Salt Black pepper, freshly groundWhisk all ingredients together and combine with salad.
