Coconut Flour Brownies

1/2 cup coconut flour1/2 tsp baking powder1/8 tsp salt 1/4 tsp baking soda1/2 tsp xanthan gum1/2 cup spoonable stevia3 tbs cocoa powder5 eggs1/2 cup warm coconut oil1/2 cup milk (I've used whole milk and coconut milk. I'm sure almond milk would work, too)2 T sf syrup (I've used mint before, but used hazelnut this time)Optional: walnuts, pecan, almond butter swirl, or homemade chocolate chips.Preheat oven to 325, and grease an 8x8 baking pan with coconut oil or non-stick spray.Thoroughly whisk (or sift) dry ingredients to eliminate lumps. In another bowl mix wet ingredients. Add dry ingredients to wet ingredients and mix until combined. Pour into prepared pan and bake until toothpick comes out clean (about 28 minutes).Allow brownies to cool in pan. Cut into 9-15 servings, wrap, and freeze (so yo aren't tempted to eat too many!).Serve with a scoop of "So Delicious" sugar-free coconut milk (or homemade) ice cream. Or make a simple chocolate ganache (baking chocolate, heavy cream, and sweetener) to frost. Yum!
