Sweet Potato Soup

Ingredients
1 T EVOO1/2 cup chopped onio1.5 cup cubed sweet potato1/2 cup red bell pepper1 celery stick, chopped1/2 cup chopped carrots2 garlic cloves, minced1/2" chopped fresh ginger4 cups water1 T McCormick Chicken Base1/3 cup peanut butter1/4 cup salsaTop with Chili powder if desired
Directions
Saute onion in olive oil over low heat until carmalizing. Add all vegetables and cook 5 more minutes. Add water and chicken base. Bring to a boil. Reduce heat and simmer 10 minutes. Add peanut butter or almond butter and salsa. Put in blender and blend until smooth. Top bowls with chili powder as garnish as desired.
