Strawberry-Pecan Cookies

Ingredients
1 c. sugar¾ c. shortening½ tsp baking soda2 large eggs, beaten3/4 c. strawberry puree (about 7 large strawberries)2 ½ c. flour½ c. brown rice flour½ tsp. salt¾ c. chopped pecans
Directions
Preheat oven to 350º. Lightly grease cookie sheets.
In a large bowl cream sugar, shortening and baking soda.
Add eggs and strawberry puree, mix until thoroughly beaten.
Stir in flours, salt and pecans. Mix well.
Drop by rounded tablespoonfuls onto sheets.
Bake 15 min. Let cool for 5 minutes, remove to rack.

    These were very yummy! I did not have brown rice flour so I used all white flour and added a cup of wheat germ. I will definitely make them again. - 8/26/09
