Introduction

This sweet and spicy salsa is great on tortilla chips or with your favorite grilled meat. Tastes like summer! This sweet and spicy salsa is great on tortilla chips or with your favorite grilled meat. Tastes like summer!
Number of Servings: 12

Ingredients

    2 large ripe red tomatoes, finely diced
    2 large ripe but firm peaches, finely diced
    1 mango, finely diced
    2 tbsp fresh cilantro, chopped
    1/2 yellow bell pepper, diced
    1/2 large onion, diced
    1 jalapeno pepper, minced
    1 tsp ground cayenne pepper (optional- add more or less to preferred spiciness)
    Juice of 1 large lime

Directions

Combine all of the prepared ingredients in a large bowl, refrigerate for at least one hour for the flavors mix. The ground cayenne pepper is optional -- add it if you would like a hotter salsa.

I like to serve it with blue corn tortilla chips, although it is also delicious with grilled meats and fish.

Makes 12-16 servings of 1/2 cup.
