Ingredients
2 tbsp of olive oil ( divided)1 lrg sweet yellow onion cut in half and sliced2 cloves of garlic, minced1-2 russet potatoes, unpeeled1 zucchini1 yellow squash3 lrg roma tomatoesSea salt and cracked pepper to tastedried thyme to taste1/2 cup of grated Parmesan cheese
Directions
Preheat oven to 375 degrees. Coat a baking dish with olive oil cooking spray. Heat 1 tbsp of olive oil in a large skillet over medium heat. Once hot, add the onions and saute until translucent, about 8 min. Add garlic and cook for another 60 sec. Spread the onion mixture on the bottom of the greased baking dish.

Slice the potatoes, zucchini, squash and tomatoes in 1/4 slice. Layer them alternatively in the dish on top of the onion, fitting them tightly into a spiral, making only one layer. Season with sea salt., black pepper and dried thyme, to taste. Drizzle the last tablespoon of olive oil over the top.

Cover the dish with tin foil and bake for 35 minutes, or until the potatoes are tender. Uncover and sprinkle the Parmesan cheese on top and bake for another 25-30 min or until browned.

    Very good but It seems the serving count is off. According to the recipe this is one serving at 872 calories. I reduced the olive oil from 2 Tbs to 1/4 Tbs and used a couple sprays of canned olive oil spray, changed servings to 4 servings ( this was enough for 4 of us) and came up with 175 calories. - 4/18/17

    The protein count seemed off so I checked it out. It all comes from the parmesan cheese. Not helpful - 2/20/17

    Ina Garten, Barefoot Contessa, has the same recipe but with Gruyere cheese. I used Gruyere and it is delicious. It feeds four generously. - 5/3/13

    I found this recipe on the same website about 6 months ago and FINALLY got around to making it. I added in eggplant to the mix and used red potato instead of russet (mainly because I had some I needed to use up). It was amazing! - 7/23/12
