Santa Maria Style Pinquito Beans, 1 cup per serving

1 lb pinquito beans, picked clean to remove any small bits1 Strip bacon, diced1/2 C ham, diced1 clove garlic3/4 C tomato puree1/4 C red chile sauce (Las Palmas brand, or other similar)1 tsp dry mustard1Tbsp sugar1tsp salt1 pinch msg (optional)Water (for cooking beans)
Place beans in 4 qt pot, cover with water, then let sit overnight.
Drain beans, then add 2 qts fresh water, bring to boil, then simmer for 2 hours.
At end of cooking, drain most of the water off beans, reserving some cooking water.
Make sauce by sauteing bacon and ham until lightly brown, then cook for 1-2 minutes longer. Add remaining ingredients, then stir into drained beans.
Cook on stove for 1/2 hour, adding reserved liquid as needed.
Serving Size: Makes 6 1-cup servings.
