Crock Pot Carrot Soup

Ingredients
1 medium onion, chopped2 large cloves garlic, minced1 1/2 pounds carrots, peeled, trimmed and cut into 3-inch pieces1 box (32 oz) vegetable broth2 T. packed brown sugar1 1/2 t. ground ginger2 T. heavy cream1/4 t. salt
Directions
1. Scatter onions and garlic in the bottom of crock pot, top with carrots, add broth and two cups of water.
2. Cover and cook on HIGH for 6 hours or LOW for 8 hours.
3. Uncover ans stir in brown sugar, cream, salt, and ginger. Blend with an immersion blender (or portion into regular blender) and puree until desired consistency is reached.
4. Transfer to bowls. Garnish with cilantro if desired.

*For a thicker soup, add 3 T. instant potato granules before blending.
