Healthy Ham and Bean Soup

Ingredients
1 pound bag of dry white beans (Great Northern or Navy are good.1 pound of reduced sodium low fat ham. Ask at deli.1 pound of long carrots, peeled and diced1 large onion, diced2 large stalks of celery slice thin8 cups of water1 tsp ground ginger3 tsp of salad mustard, brown mustard or 1 tsp mustard powder2 large Bay leaves optional8 oz scrubbed, diced raw potatoes with the skins1 can of diced tomatoes low sodium add at end of cookingoptional ingredients not included in nutrition measure
Directions
Pick over beans for tiny rocks and less than perfect beans. Pre soak beans over night or bring to boil and let set for 1 hour in the hot water. Be sure to more than cover beans with water.

Dice ham and brown in heavy pot or Dutch oven. Add diced onions to browned ham, cook stirring often until translucent. Then add water and pre-soaked beans. Add carrots, celery, Bay leaf, ginger, mustard, and cook for 2 hours boiling slowly. This will thicken as it sets after cooking. It is low sodium for a ham and bean soup with 390mg of sodium for about a 3 cup serving. That is quite good for sodium. If you were to add 8 oz of diced raw potato and a 14 oz can of low sodium tomatoes, you will still have a low sodium soup, and can easily get 10 servings from the pot. I make mine in a 7 quart Dutch oven.
