Beef Sirloin Roast

Directions
1, 8-9 lb Beef Sirloin Roast1, 10oz bag frozen pearl onions, or 2 cups chopped onions.1 12oz frozen pepper medley, or 3 cups sliced fresh pepper medley (Green, Yellow, and Red). 2-3 garlic cloves, cut into slivers/slices. Weber* Sweet and Tangy BBQ seasoning.Ground Black PepperGarlic SaltOven Safe Cooking Bag.
Preheat oven to 325 degrees
1. Rinse Beef Roast, whole. Do not cut, unless cutting fat off.
2. With a fork, give the roast a few stabs. Set Aside.
3. On a Cutting Board, cut garlic into slivers/strips.
4. Back to the Roast, take an Ice Pick or Knife, and make holes in the top and/or sides of pot roast.
5. Plug each hole with a strip of fresh garlic.
6. After all garlic is used, sprinkle and rub on both sides of roast: Garlic Salt, Black Pepper, Weber Sweet and Tangy BBQ Seasoning. Rub it in really good!
7. Prepare oven safe cooking bag, by tossing 1 tsp of flour in bag.
8. Pour 1/2 of Peppers and Onions into Oven Safe bag.
9. Place Roast on top of veggies in bag, then cover with remaining veggies.
10. Seal the bag with the tie, and stick it in an oven safe dish, and into the oven!
Bake for about 2 hours, or until done. All the onions and peppers should be very soft, and the meat tender.
Serving Size: Makes 32, 4 oz servings.
