Apple Cider Chicken Stew for the Slow Cooker

4-6 Medium potatoes4 Medium carrots1 onion1 celery rib1 1/2 tsp salt3/4 tsp thyme1/2 tsp pepper2 pounds boneless, skinless chicken breast, cubed2 large apples, any variety but Granny Smith works well1 1/4 cups apple cider1 TBS cider vinegar1 bay leaf
Just dump all vegetables and chicken chunks into crockpot. You could brown chicken if you want to. I make it both ways and it's great either way. Place the apples on the top, preferably in small cubes so they will disintegrate during cooking and become part of the "sauce." Then pour over the cider and cider vinegar with the spices and set on low and cook all day, or about 4-5 hours on high.
