Ingredients
1C Peanutbutter (we like Jif)1C Sugar (optional: 1/2c more)1 egg
Directions

Mix thoroughly. Make small balls of dough (smaller than a golf ball) then roll it is a plate of sugar to coat ball (optional). Place on pan and smoosh with fork twice, making hatch marks. Cook 350 degrees 7-10 min. Recipe does not include the sugar coating - if you skip it no one will know.

    THey hold together wonderfully without the flour...although they are sticky when you roll them in a ball. I usuallly put my fork in a mixture of cinnamon and sugar when I indent the cookies....and I always make a double batch.....they turn out perfect. - 12/22/08

    Loved making these! Three ingredients I already had in my cupboard and took no more than five minutes to get in the oven. Doesn't get much better than that with a toddler running around! They do fall apart, but it's a small price to pay for the easy, easy recipe. - 11/11/10

    I made these tonight and they are GREAT! All I had was reduced fat peanut butter so I used that and I also used half sugar and half splenda. Mine came out to be 82 calories and 4 grams of fat per cookie. Delicious! - 8/4/09
