Massaged Kale Salad

Ingredients
6 cups kale1/3 cup chopped red onion1 small avocado1/4 cup loosely packed raisins2 tablespoons lemon juice2 tablespoons apple cider vinegarsalt and pepper to taste
Directions
1. Remove kale from stems and wash thoroughly.
2. Put all ingredients except for raisins into a large bowl.
3. Using your hands massage the avocado, lemon juice, and vinegar until all of the avocado is gone. You really want to get in there and get your hands dirty. The acids and salt "cook" the kale and the avocado acts as a dressing.
4. Add the raisins and more salt/pepper if needed, toss gently.
