Japanese Miso Soba Soup

Ingredients
4.5 cups water2 packets of instant miso soup - 10g each2 cups of stir fry veg2 cups of cooked and peeled prawns1 bundle of soba noodles - buckwheat - 85g
Directions
Bring to boil 4.5 or a little more if you wish if you like your soups thinner - cups of water.

Add miso packets and stir well.

Stir in the soba noodles.

Once almost tender - it takes around 15 minutes, add prawns and vegetables and cook for a further 5 minutes to ensure the veg is cooked but not overcooked - you can keep it as al dente as you wish.

Season with salt if desired, I usually think the mild taste is fine and the prawns and veg add a lot of flavor anyway.
