Homemade Ratatouille

Ingredients
1 Eggplant cubed/diced2 cloves garlic1 medium onion2 cans diced/stewed tomatoes2 Zucchini or Squash cubed/diced6 cups (16 oz) Whole wheat medium shells2 tbs olive oil2tbs Herbs de Provence seasoning
Directions
Saute garlic and onion in olive oil until onions are translucent about 5 minutes

Add squash, eggplant, tomatoes and Herb de Provence. Bring to boil, simmer 20 minutes.

While ratatouille simmers, boil pasta per instructions

Add 1 cup Ratatouille to 3/4 cup of Pasta. Top with mozzarella (optional)
