Italian Chicken Bake

8 oz of chicken breast1/4 cup white wine1/4 cup vegetable broth2 cloves of garlic, minced1 cup frozen spinach, finely chopped4 oz cooked pasta 2T Parmesan cheese, grated2tsp olive oil1 cup marinara sauce
In a large pot, bring water to a boil and prepare pasta according to package directions.
Preheat the over to 350 degrees F.
Prepare the sauce as follows: in a small frying pan over medium heat, cook the garlic just until fragrant. Next add the spinach and continue to cook until the spinach has softened. Finally, add the marinara, white wine and vegetable stock and stir to combine. Remove from heat.
In a shallow baking pan arrange the chicken and top with the sauce and the grated Parmesan cheese. Bake at 350 for approximately 30 minutes or until cooked through. Serve over the cooked pasta.
