Chicken Cacciatore, Low Sodium

Ingredients
2 Tbs. olive oil2 bell peppers, sliced1 large sweet onion, sliced8 oz sliced mushrooms2.5 lbs. boneless, skinless chicken breasts4 cloves garlic, minced1 large can no salt added chopped tomatoes, or 2 regular cans2 tsp italian seasoning1 tsp basil1 tsp sugar8 oz whole wheat pasta, cooked
Directions
Coat chicken with 1 tsp italian seasoning and brown in 2 Tbs. olive oil. Remove chicken and add vegetables cooking until just starting to get soft. Cut breasts in half (they won't be cooked through yet). Add tomatoes, chicken and seasonings to pot and bring to a boil. Reduce heat and cook for an additional 20 min. Serve over whole wheat pasta.
