1 - 15 oz can chickpeas, drained1 stalk celery, finely chopped1 med. carrot, finely chopped1 green onion, finely chopped2 tsp. mayo1 tbsp pickle relish1/4 tsp salt
Mash the chickpeas with a fork. Leave some chunks. Add the celery, carrot, onion and mayonnaise, and relish. Add salt to taste. Serve on whole wheat bread or in pita bread with lettuce and sliced tomatoes.
