Quiona Pilaf

Ingredients
1 can Vegetable broth1 c chopped onions. (1 onion)1 c chopped carrots (2-3 carrots)8 oz pieces and stems mushrooms 1 1/2 c Quiona1 c chopped walnuts2 tsp extra virgin olive oil
Directions
Heat oil in sauce pan over med heat. Cook onion for about 6 min. Add carrots and cook about 5 min. Add mushrooms, Add Vegetable broth. Add quiona.
Mix when adding, bring to a boil. then simmer aprox 25 min. It will be tender and fluffy. Toss in chopped walnuts
