Green Bean Casserole with Mozzarella Cheese

* 1 bag frozen green beans (32 oz, or approximately 7 1/2 cups) or 2 cans green beans* 8 ounces shredded mozzarella cheese* 2 tablespoons smart balance* 2 tablespoons flour* 2 teaspoons grated onion* 1 teaspoon salt (or 2 tsp kosher salt)* 1/4 teaspoon pepper* 1 teaspoon Splenda* 1 cup plain greek yogurt* 1 cup panko bread crumbs, tossed with a few teaspoons of smart balance
In a saucepan over medium-low heat, melt smart balance. Add onion and cook for about 30 seconds. Stir in flour, salt, pepper, and splenda; blend well and continue cooking and stirring until bubbly. Stir in yogurt and cook over low heat for about 1 minute.
If desired, in a separate saucepan, saute beans to cook through.
Spread beans over the bottom of a buttered (with smart balance, butter, or whatever you have handy) casserole dish (11x7x2-inch baking dish or similar size). Sprinkle shredded cheese over green beans then pour sauce evenly over; top with buttered bread crumbs. Bake green bean casserole at 400° for 20 minutes. (Cooking time may be increased if beans were not sauted prior to adding to casserole dish.)
Serving Size: Makes about 20 1/2 cup servings
