Vegetarian Lasagne

1 cup fresh mushrooms1 medium onion, chopped2 cups ricotta cheese1 package frozen spinach16oz lasagne noodles, prepared1 large egg1.5 red peppers, diced3 tbspns Olive oil
Chop onions and red peppers, place on foil lined cookie sheet and drizzle with olive oil. Bake for approximately 10-15 or until slightly browned. While browning onion and peppers, saute' drained spinach and mushrooms until warmed and slightly wilted, remove from heat. Combine onions, peppers, spinach and mushrooms with ricotta and one large beaten egg.
Using a non-stick 9X12 pan, first layer noodles and then veggie mixture until final layer is noddles. Spray top very lightly with non-stick cooking spray and bake in oven at 325 for approximately 30 minutes covered, and another 10-15 minutes without cover.
Serve and enjoy with homemade garlic bread! (Serves 12)
