Cut chicken into 1-inch pieces. Chop onion.

Melt butter over medium heat. Add chicken and onion. Cook until chicken is no longer pink, roughly 10 minutes. Add lemon juice, cook for 1 minute. Add spices, stir well and cook for 1 minute.

Add tomatoes and half and half, bring to a boil, then simmer for 10-15 minutes.

Serving Size: Makes 4 1-cup servings, roughly
