Quick Chicken Cacciatore

Ingredients
4 chicken legs, with skin and boneolive oil1 large red onion, sliced3 cloves garlic, crushed1-2 bell peppers, chopped3-6 mushrooms, chopped2 tins chopped tomatoes100 ml dry white wine1 chicken stock cube, dissolved in 1/2 cup waterfresh rosemaryfresh thymesalt, to taste
Directions
Rinse chicken and cook 4 minutes on each side in olive oil. Remove and sautee onions and garlic in same pan. Re turn chicken to pan and pour in tomatoes, wine and stock. Place sprigs of rosemary and thyme on top, cover and simmer for 10-15 minutes. Remove herbs, stir in mushrooms and peppers, return herbs and simmer another 10 minutes. Salt and pepper to taste. Remove herbs before serving with a side of pasta.
