Cheese Stuffed Shells

Ingredients
1 box jumbo shells, creamette brand2 eggs3/4 cup parmesan cheese2 containers low fat ricotta 16 ounces flavored or regular mozzarella cheese, shreddedabout 2 jars of pasta sauce
Directions
Nutrition info is per shell. with equal amount of sauce.
prepare jumbo shells according to package instructions. drain.
in a large bowl, mix together 2 eggs, 3/4 cup parmesan cheese, and about 12 ounces of shredded mozzarella cheese- use the garlic flavored kind that is preshredded in a bag for you, if possible. gives it better flavor. add the two containers of reduced or fat free ricotta cheese, 16 ounces each. Mix well.
fill the shells using a small spoon with the cheese mixture. place in baking pan or pans.
(i use several smaller baking pans and freeze them.) cover shells with almost all of 2 jars of pasta sauce, your choice for flavor. if desired, add cooked ground beef or turkey to the sauce. sprinkle more shredded cheese on the top, approximately 4 ounces. use fat free or reduced fat cheese if you prefer.
cover with foil and bake at 350 degrees for 1 hour.
to freeze, cover with plastic wrap, then foil. when ready to bake, remove plastic wrap and replace foil. bake at 350 for 2 hours.

    We love stuffed shells and this was a great recipe. For our family, though, we prefer more flavor, so we're going to add fresh garlic, oregano, and maybe a few other spices to the sauce the next time we make it. Great with home-made garlic bread! - 2/18/11

    This is an awesome recipe, my family loved it. I did make one change. I'm from Louisiana so I needed a little more flavor in the sauce. I soaked dried shrimp in 1/4 cup of water for 30min (while I was preparing the shells) and then mixed it (water included) with ground turkey and the pasta sauce!!! - 2/13/11
