GF DF White Bean Soup

Directions
2 tbsp extra virgin olive oil1/2 small onion, chopped2 cloves garlic, minced2 large carrots2 stalks celery4 chicken or beef broth2 cans white beans (red work well too)1/2 pound ground beef (optional)salt and pepper to taste1 tbsp fresh thyme (1 tsp dry)1 tbsp fresh sage (1 tsp dry)2 bay leaves1 zucchni, chopped
Saute onion and garlic
Add carrots and celery.
Add all other ingredients except zucchini. Cook for 30 minutes.
Add zucchini a few minutes before serving.
Can serve over pasta or add brown rice to the soup.
Crock pot option-
Saute veggies. Put all in crock on low for 4-6 hours. Add zucchini 30 min - 1 hr before serving.
