2 1/2 lb.chuck roast,trimed of excess fat.pkg.baby carrots2 cans,stewed tomatoesi cup chopped onion3 tspn.chopped garlic2 tbl.Olive Oil1 tbl.rosemary,crumbled1 tspn. thyme,crumbled 1 tspn.black pepper
1. saute (brown) roast on both sides in olive oil at high heat.
2.place roast in crock pot
3.lower heat to med. saute onion,garlic and herbs in same pan till onion turns clear turn up heat .add remaining ingredents and cook 10 min.
4.Pour ingriedents over roast
5.cook on high 1 hr. then low 4/5 hrs.till tender.
6.worshestershire sauce is a good addition but due to sodium should only be used in moderation.
7.portion in freezer safe tubs or bags.
8.Can be used as is,over brown rice,whole wheat noodles or buckwheat groats.
