Homemade Veal Stew

Ingredients
Veal (cubed for stew) 1 lb.Organic Low Sodium Chicken broth - 4 cupsWater - 4 cups2 cups fresh or frozen peas3 cups frozen corn3 cups frozen shelled edamame3 cups baby carrots1 large sweet potato1 extra large potato1.5 cup chopped celery1 cup diced onion1.5 cup cornstarch
Directions
brown veal in pam/nonstick pan
transfer to crock pot.
Add liquids and vegetables. Season to taste. And let cook for at least 4 hours on high. Add cornstarch mixed with a small amount of water in the last hour to thicken.

I used bay, tarragon, rosemary, thyme, pepper. Salt can be added at the table for those NOT maintaining a low sodium diet.
