Onion Lentil Soup

2 Tbsp olive oil2 yellow onions, sliced2 cloves garlic, smashed and minced2 cups dry lentils, rinsed and sorted1 cup carrots, sliced into coins5 cups chicken stock (OR 1 4-cup box of chicken stock and 1 to 2 cups water, depending on how thick or thin you like it)1 cooked chicken breast, shredded2 medium tomatoes, chopped
In a large pot, heat up the olive oil over medium-low heat. Add the onions and let them heat up to caramelize them (they'll get a nice brown color, could take up to 30 minutes, maybe even longer). Add all other ingredients, stir, then let simmer for 30 minutes.
You can serve it with fresh herbs (parsley, chives) and a dollop of fat free plain yogurt*
