Baked Ginger Pumpkin Oatmeal

Ingredients
1 cup pumpkin puree.5 cup cottage cheese (nonfat)4 cups of water2 tsp vanilla extract2 cups of oats (not the quick-cook type)1 tsp baking powder4 dashes of salt4 tsp cinnamon4 tsp ground ginger
Directions
Combine all wet ingredients in a large mixing bowl.
Place dry ingredients, except ginger, into a small bowl. Mix.
Mix dry ingredients with wet. Stir in ginger.
Bake in oven-proof dish at 350 degrees for 30 minutes.
Serve.

    Needed to add a tbs of sweetener for the kids and cook it five minutes longer because it was still soupy in the middle after 30 minutes. - 2/7/12
