1 rotisserie chicken, white meat only, no skin, chopped2 T. mayonnaise made with olive oil5 oz. Cabot Light Cheddar, grated1/4 cup sliced almonds, toasted1 cup seedless grapes, cut in halvespepper & salt to taste

Stir together all ingredients and serve!
