Slow Cooker Beef Minestrone (Low Carb/Gluten Free/Paleo)

Ingredients
2# Chuck roast, cubed and trimmed of fat2T Olive Oil2 oz. each cabbage, onions, celery and carrots32 oz. Beef stock1 can diced tomatoes1 can tomato paste, plus 20 oz. water6 oz. baby spinachOnion powder, garlic powder, basil, oregano, thyme, salt and pepper to taste.
Directions
Heat oil in a heavy skillet, and sear beef cubes. Remove to slow cooker. Add vegetables and seasonings, and sautee until crisp-tender. Add to slow cooker. Mix tomato paste and water and add to slow cooker along with tomatoes and stock. Cook on low 8 hours. Add spinach, cook about 5 minutes to wilt and serve.

Serving Size: Makes about 14 cups. Serving size = 2 cups
