Pizza Soup

Ingredients
1 bell pepper, diced1 onion, diced2 servings (about 17 slices each) sliced turkey pepperoni (best if cut in half or in quarters)2 cans diced tomatoes with roasted garlic (or Italian flavor)(undrained)1 28oz can crushed tomatoes1 7oz can sliced mushrooms 1 can (28oz) water2 cups fat-free beef broth1 Tbs dried Italian seasoning1/2 cup shredded reduced-fat mozzarella cheese2 Honeysuckle White Italian Sausage links - skins removed and browned on stovetop.1 15oz can of black beans (pureed)Additinal seasoning to taste
Directions
Place all ingredients except mozzarella cheese in a large slow cooker or in a large soup kettle. Adapt to reflect your child’s preferences, leaving out ingredients they don’t care for, or adding ones they enjoy on pizza.


For slow cooker, cook on high 2-4 hours or low 6 to 8 hours.



For soup kettle, bring to a boil and simmer 20 minutes.



When vegetables are tender, ladle into soup bowls and sprinkle with cheese. For children, remember to use a pot holder when handling hot pans!
