1 Tbsp Olive Oil2 Links Chorizo Sausage (cut in bite size pieces) or substitute with 8 slices of Bacon1/2 Yellow Onion (diced)2 Cloves Garlic (minced)14 oz Can Cream of Corn10 oz Can Evaporated Milk1 Large Fresh Egg (beaten)1/2 Cup Grated Parmesan Cheese2 Tbsp Unsalted ButterSalt & Pepper to TastePinch of Red Crush Pepper16 oz Dried Pasta (Your Favorite)
Boil Pasta Al Dente per Package Instructions
In a Dutch Oven Heat Olive Oil
Add Onion, Garlic, and Chorizo. Let Sweat
Add Cream of Corn and Heat
In a Separate Bowl Beat Egg, Add 4 oz of Evaporated Milk, and Parmesan Cheese
Temper Egg Mixture, and Add to Dutch Oven
Once Incorporated Mix Until it Thickens
Add Salt & Pepper to Taste
Add Crushed Red Pepper
Simmer for 5 Minutes
In a Large Bowl Mix Cooked Pasta with Sauce. Serve
