Ingredients
2.5 cups egg substitute1/2 cup skim milk1 tsp cumin1/2 tsp taco seasoning1/2 cup onion2 cloves of garlic, minced1/2 cup red bell pepper, chopped1/2 cup black beans, rinsed and drained1/2 cup corn1/2 cup green pepper, chopped1/2 cup canned tomatoes with chilis, drained1/2 cup pinto beans, rinsed and drained1/2 cup mushrooms, chopped1 cup chopped ham, rinsed and drained1/2 cup mexican cheese blend
Directions
preheat oven to 375
spray a nonstick 9x9 or 8x10 baking pan with cooking spray
mix ALL the ingredients except cheese in the pan.
Sprinkle the cheese over the top and bake for 1 hour
(optional) top with shredded lettuce, salsa, either non fat plain yogurt or fat free sour cream
