Spinach Quiche'

Ingredients
1 10 oz. pkg. frozen spinach chopped1/2 c. cottage cheese1/2 c. chopped onion1 c. swiss cheese, grated1/2 c. celery, chopped2 eggs1/2 stick butter1 c. milk1 tsp. salt1/2 tsp. pepper1/4 tsp. nutmeg1 9" pastry shell (pie crust) ready to bake
Directions
Cook spinach in salted water according to pkg. directions. Drain well. Saute onion and celery in butter until onion is soft. Spread cottage cheese over bottom of a deep pastry shell. Mix spinach with onion mixture and spread over cottage cheese. Sprinkle swiss cheese over top. Combine eggs, milk, and seasonings and pour over all. Bake at 350 degrees for 40-45 min. or until set.
