Carrot Cake Salad

Ingredients
4 fresh beets grating1.5 cups grated carrots2 apples grated 1/2 cup minced pecans8 tbsp flake coconut for bakingOPTIONAL: 1/2 cup minced celery, 1/2 cup raisins
Directions
This is a very easy recipe if you have a food processor.

Scrub all fruits and veggies so no grit gets in the salad.

Grate the beets, apples anc carrots in the food processor until fine, but not mushy.

Toss into a bowl until well blended.

Sprinkle with coconut, nuts, raisins or other options. Chill, and serve.

Looks best served in a glass bowl where the colors can be appreicated.

My 4 year old LOVES this!!!
