Ground Turkey Vegetable Soup

1 pound lean ground turkey5 medium red potatoes (diced)1 sm bag of baby carrots (diced)1 slice of onion (diced).25 of red bell pepper1 lg can of tomato juice (48 ounces)3 beef buillion cubes1.5 t oregano2 t herbs de provance1 t celery saltsalt and pepper to tastewater as needed
Use a dutch oven or crockpot. Place one cup of water in crockpot with spices and beef bullion cubes. Turn on high and begin cleaning and dicing potatoes, carrots, onion, and red pepper. Place vegetables in crockpot and add tomato juice. Cook on high, covered, for 4-5 hours, or you can cook it on low all day. (DO NOT ADD THE MEAT YET!!) About 30 minutes to 1 hour before you are ready to eat, brown the ground turkey in pan, drain, and add to crockpot. Add can of corn and green beans (You can add any vegetables you like!) Allow flavors to meld together for a while. Stir and add water if necessary. This is great for cold weather and requires virtually no time in the kitchen..great for busy people that want that "long time spent in the kitchen" taste.
