1 lb. extra lean ground beef 7% fat1 can Amy's organic cream of mushroom soup4 cups finely diced yukon gold potatoes1 cup of shredded cheddar cheese1 cup onion, finely chopped and separated1/4 cup green pepper, finely chopped
Preheat oven to 350 degrees F. Brown the ground beef and half of the onion. Diced the potatoes, green pepper and remaining onions and mix well. Spray a 9x13 baking pan with organic olive oil spray and scoop in the potato, green pepper and onion mixture and spread to make an even layer. Once the ground beef is browned, add soup to the beef. Pour beef, onion and soup mixture over the potatoes in the baking pan and spread evenly over top of the potatoes. Sprinkle the shredded cheese over top and bake for 35 minutes.
