Lemon Caper Turkey Cutlets

1 lb. sliced turkey breast cutletsjuice of one lemon2 tbls. capersflour, approximately 1 c.1 egg, beatenolive oil for cooking
pour beaten egg onto a plate
measure out flour on a separate plate (can be seasoned with salt, pepper, or whatever herbs you'd like)
dip turkey cutlets in egg, then in flour
heat 1-2 Tbls. olive oil in frying pan over medium high heat
saute turkey approximately 3 min. per side
remove from pan
deglaze the pan with the lemon juice and scrape any bits off the bottom of the pan, making a sauce. add capers, and serve over the turkey.
serves 2-3 people
