Ingredients

Two fresh tomatoes, diced
1/2 oz fresh Basil, chopped
2 tbsp Onion, diced finely
2 cloves Garlic, minced
2 Chicken Breasts (~10 oz), chopped
1/4 c crushed Italian Bread Crumbs
2 tbsp Grated Parmesan
Directions
Preheat oven to 375.
Layer the ingredients in a loaf pan:
Bottom layer: tomatoes
onion
garlic
basil
chicken
bread crumbs
Parmesan
Place in oven and bake for 45 minutes or until the chicken is done and the Parmesan is well-toasted. Serve over noodles (I liked mine with extra parmesan).
