Roasted Vegetables with Tahini Dressing

Ingredients
8 red potatoes, chopped 1"4 c brussel sprouts4 c parsnips, chopped 1"1 large red onion chopped 1'1 red bell pepper, chopped 1"1/2 c olive oil1/4 c tamari1 T herbes de Provence1 c Tahini Dressing1" piece of ginger, grated
Directions
Preheat oven to 400. In baking pan, toss the veggies with the oil, soy sauce, and herbes de Provence. Bake for 1 hour, stirring the veggies every 15 min, so that they cook evenly. Add the fresh ginger to the Tahini Dressing, mixing well. Serve the veggies with the suace drizzled or on side.

    Great taste, I did mine on top of Quinoa, with Black Bean Chipotle burger then the Roasted Vegetables, and added the Tahini dressing. Great "rustic" (my family gives me heck about calling things this) flavor. Restaurant quality with easy, quick homemade dish. - 10/23/11
