Olive Garden Pasta Fagioli Copycat - 1 cup/serving

Ingredients
1 lb lean ground turkey1 small inion, chopped3 large carrots, julienned3 large stalks celery, chopped4 cups baby spinach leaves2 cloves garlic, minced2 cans(15 oz) Petite diced tomatoes2 cans (15 oz) toamto sauce3 cups V8 or vegetable juice1 can (15 oz) Great Northern beans, drained1 can (15 oz) Kidney beans, drained1 Tbsp vinegar1/2 tsp salt1 tsp ground oregano1 tsp basil1/2 tsp black peppepr1/2 tsp dried thyme6 oz uncooked small shell past or ditaline
Directions
Brown ground turkey in a large saucepan over medium heat. Add onion, carrot, celery and garlic and saute for 10 minutes. Add remaining ingredients except pasta and simmer for 1 hour. About 50 minutes into simmer time, cook pasta according to package directions until al dente. Drain and add to soup. Simmer for 5-10 minutes and serve
