Curry Lentil Soup

Ingredients
1 Package of dried Lentils( it doesn't matter what kind)4 Lrg Stalks of Celery Diced (small cubes)3 Med Carrots Diced (small cubes)2 Tbs minced Garlic.. Jarred is fine1 Med Sweet Onion7- 14.5 oz cans of FF low sodium Chicken Stock 1/2 Cup Chopped Fresh Parsley2 Tbs Fresh Thyme2 tsp Cumin1/12 Tlb Curry PowderSea SaltCracked Pepper2 Tbs Olive Oil2 Tbs BBQ Sauce
Directions
Add the Olive oil to a large 5 quart pot and heat on med high. Add first 5 ingredients, Curry and Cumin and saute for about 5 mins until you see the Lentils swelling.. Add Chicken Stock 1/2 of your parsley and bring to a boil. Salt and pepper to taste. When you are almost done you will add the BBQ Sauce and the rest of your Parsley.. Once the Lentils are tender your soup is done..
