Stuffed Bell Pepper Soup

Ingredients
3 lg chopped green peppers1 lg chopped onions1 ts canola or olive oil2 cloves garlic1 tsp oregano1 tsp parsleysalt and pepper to taste1 cup cooked brown rice2 15 ox cans of dice tomatoes1 15 oz can tomato sauce1 lb lean ground beef
Directions
In a large, heavy pann, saute the fresh veggies, garlic and herbs inthe oil until soft - about 10 mins
Remove veggies and then cook ground beef in same pot, making sure to break up the meat as it cooks. Reduce the heat and add remaing ingredients. Let it simmer for 45 minuts.


I add extra veggies and a hot pepper.

    so good, so very good :) a husband and 3 out of 3 kids loved it too! i used ground turkey and some garlic. as an added treat, a little bit of hot sauce gives it a nice kick :) - 1/29/12
