1.5 cups unsweetened cocoa powder3 cups flour3 cups sugar3 tsp baking soda1.5 tsp baking soda4 large eggs1.5 cups warm water1.5 cups soy milk (I used So Good Fat Free)3 tbsp unsweetened applesauce2 tsp vanilla extract
preheat over to 350 degrees. Line muffin tin with paper liners, set aside. Sift together cocoa powder, four, sugar, baking soda, baking powder into a large bowl. Add eggs, warm water, soy milk, applesauce, and vanilla, and mix until smooth (about 3 minutes). Scrape down the sides and bottom of bowl to ensure batter is well mixed. Fill each muffin liner with 2/3 batter. Bake for approximately 22 minutes. Transfer to a wire rack; let cool completely.
