Adina's Non-fat Vegetarian Split Pea Soup

* Split Peas, 2 cups * Carrots, raw, 3 medium, peeled and chopped * Onions, raw, 1 cup, chopped * Celery, raw, 2 stalk, medium (7-1/2" - 8" long), diced * Sweet potato, 1 tuber, 5" long, peeled and diced * Thyme, ground, 1 tbsp * Water, tap, 10 cup (8 fl oz)
Prep all the vegetables as specified.
Place all ingredients in 12-cup soup pot. Cover and bring to a boil. Uncover, stir, and reduce heat to medium high. Stir often and lower heat to simmer. Cook for 90 minutes-2 hours, until peas and vegetables are very soft. Puree if desired.
Add salt and/or other spiced, if desired.
Serving Size: makes 5 2-cup servings
