Russian Beet Salad (Vinegret)

3 medium beets, peeled, boiled and diced3 medium potatoes, peeled, boiled and diced1 large onion, diced3 medium dill pickles, diced1 tbsp balsamic vinegar1 tbsp extra virgin olive oil1 tsp black pepper (or to taste)
Peel, boil and cool the potatoes and beets. Dice the potatoes, beets, pickles and onion and put in a bowl. Add the oil, vinegar and pepper and mix well. The salad will gain flavor with time as it absorbs more of the dressing!
