Vanilla Sauce - for pancakes

2 TBSP cornstarch1/3 cup sugar1/8 tsp salt1 cup whole milk1 cup water2 TBSP egg white powder1 TBSP butter2 tsp vanilla1 cup berry puree (optional)
Mix cornstarch, sugar, salt, and egg white powder in a small saucepan (no heat).
Add milk and water; cook over medium heat, stirring constantly (I prefer a wisk), till mixture thickens.
Remove from heat.
Add butter, vanilla, and fruit puree if desired.
Serve warm or cold.
Store in a glass, sealed jar in the fridge.
