True Hollandaise Sauce

Ingredients
Egg yolks, salt, pepper, lemon juice, and butter
Directions
Add 1/3 butter (room temperature) and yolks to double boiler, stirring constantly. When butter melts, add next third and so on (stirring constantly). Then remove pan from boiler and stir for 2 minutes. Add lemon juice by the teaspoons, then salt and pepper. Return to double boiler until thickened (about 30 seconds).
